Sone’s Thai Baked Fish Parcels

Serves 4

2 spring onions, sliced

1/2 a broccoli, cut into florets

2 carrots, julienned

1/4 red onion thinly sliced

1 red or yellow capsicum, deseeded and thinly sliced

4 white fish fillets (approx 600g)

4 tablespoons Sone’s Salad Sauce

Salt and pepper

Steamed jasmine rice

Lime wedges

Coriander


  1. Preheat oven to 200°C.

  2. Prepare 4 squares of baking paper and 4 squares of aluminium foil.

  3. To assemble, place a piece of baking paper down on top of a piece of aluminium foil.

  4. Arrange a quarter of the vegetables in the centre of the baking paper. Season vegetables with salt and pepper. Lay a fish fillet on top of the vegetables, season with salt and pepper and spoon over 1 tablespoon Sone’s Salad Sauce. Fold up to fully enclose the fish and vegetables inside the foil and baking paper.

  5. Repeat with the rest of the ingredients so you have 4 parcels.

  6. Bake for 20 minutes until fish fillets are fully cooked.

  7. Transfer to plates, removing the paper and/or foil if you wish and serve with jasmine rice, lime wedges and coriander.
