Sone’s Easy Pork Belly Salad

Serves 4-6

500g piece of pork

Half a small packet of vermicelli noodles (cooked)
Half a sliced red and yellow capsicum 
One grated carrot 
Half a sliced red onion
100g fresh mint
100g fresh coriander 
50g chopped spring onions or chives
50g bean sprouts 
1/2 teaspoon salt
40g chopped nuts (your choice!)
As much of Sone's Salad Dressing as you want


  1. Preheat the oven to 170° and salt the pork skin.

  2. Roast the pork for approximately one and a half hours, then grill until the skin is nice and crispy, approximately 20-30 minutes.

  3. While the pork is cooking prepare your salad. Mix all the ingredients together and place the pork belly peices on top of the salad.

  4. Dress with Sone's Salad Sauce!
